Ingredients

8 oz spaghetti or linguine

2 cups fresh spinach, washed and dried

1 lemon (zested and juiced)

3 cloves garlic, minced

1/4 cup olive oil

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Red pepper flakes (optional, for heat)

Fresh basil leaves for garnish (optional)

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti or linguine and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta cooking water, then drain the pasta.

Prepare the Sauce: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for approximately 1-2 minutes, or until fragrant but not browned.

Add Spinach: Toss in the fresh spinach and sauté for about 2-3 minutes until wilted.

Combine Ingredients: In the skillet, add the drained pasta, lemon zest, lemon juice, and half of the reserved pasta water. Toss everything together on medium heat to combine. If the pasta appears dry, gradually add more pasta water until the desired consistency is reached.

Finish with Cheese: Stir in the grated Parmesan cheese until well combined, and season with salt, pepper, and red pepper flakes (if using) to taste.

Serve: Divide the pasta into bowls, garnish with fresh basil leaves if desired, and serve immediately.
