Apple Fritter Bites

2 medium-sized apples (Granny Smith or Honeycrisp), peeled and finely diced

1 cup all-purpose flour

2 tablespoons granulated sugar

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

1/4 teaspoon salt

1 large egg

1/3 cup milk

1 teaspoon vanilla extract

1/4 cup apple cider or apple juice

Oil for frying (canola or vegetable)

Powdered sugar for dusting

Prepare the Apples: In a mixing bowl, combine the diced apples with a tablespoon of granulated sugar and a sprinkle of cinnamon. Let it sit for about 10 minutes to release some juices.

    Make the Batter: In a separate bowl, whisk together the flour, remaining tablespoon of sugar, baking powder, cinnamon, nutmeg, and salt. In another bowl, beat the egg, then add the milk, vanilla extract, and apple cider. Mix well.

      Combine Ingredients: Gradually fold the wet mixture into the dry ingredients until just combined. Be careful not to overmix. Gently fold in the prepared apples.

        Heat the Oil: In a deep skillet or pot, pour enough oil for frying (about 2-3 inches deep), and heat it over medium-high heat until it reaches 350°F (175°C). You can test the temperature by dropping a small amount of batter into the oil; it should sizzle immediately.

          Fry the Bites: Once the oil is hot, use a tablespoon or small cookie scoop to drop spoonfuls of the batter into the oil, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side, or until they are golden brown. Remove with a slotted spoon and drain on paper towels.
