Instructions

Marinate the Chicken:

    - In a bowl, combine minced garlic, smoked paprika, cumin, oregano, soy sauce, olive oil, orange juice, lime juice, salt, and black pepper.

      - Add the chicken thighs and coat them well in the marinade. Cover and refrigerate for at least 1 hour, or preferably overnight for more flavor.

        Cook the Chicken:

          - Preheat your grill or oven to 375°F (190°C).

            - If grilling, place the marinated chicken on the grill and cook for about 5-7 minutes per side, or until the internal temperature reaches 165°F (75°C). If using the oven, place the chicken on a baking tray and roast for about 30-35 minutes, turning halfway through.

              Prepare the Sautéed Lemon Zucchini:

                - While the chicken cooks, heat olive oil in a large skillet over medium heat.

                  - Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant.

                    - Add the zucchini slices and cook, stirring occasionally, for about 5-7 minutes, or until tender but still crisp.

                      - Remove from heat and squeeze fresh lemon juice over the zucchini. Season with salt and pepper to taste. Toss to combine.

                        Serve:

                          - Once the chicken is cooked through, remove it from the grill or oven and let it rest for a few minutes.

                            - Serve the Asado chicken alongside the sautéed lemon zucchini, garnished with fresh cilantro and parsley if desired.
