Ingredients
  

1 lb ground beef

1 tablespoon sesame oil

2 cloves garlic, minced

1 inch ginger, grated

1 red bell pepper, finely diced

1 cup shiitake mushrooms, finely chopped

3 green onions, chopped

3 tablespoons soy sauce

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sriracha (adjust to taste)

1 head of butter lettuce (or iceberg lettuce), leaves separated

Fresh cilantro and crushed peanuts for garnish (optional)

Instructions
 

In a large skillet, heat the sesame oil over medium heat.

    Add the minced garlic and grated ginger, sauté for about 30 seconds until fragrant.

      Increase the heat to medium-high, then add the ground beef. Cook until browned, breaking it up with a spatula, about 5-7 minutes. Drain any excess fat.

        Stir in the diced red bell pepper and chopped shiitake mushrooms, cooking for another 3-4 minutes until the vegetables are tender.

          In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, and sriracha. Pour this sauce over the beef mixture and stir to combine thoroughly. Cook for an additional 2 minutes.

            Remove from heat and stir in the chopped green onions.

              To serve, spoon a generous amount of the beef mixture into each lettuce leaf, adding fresh cilantro and crushed peanuts if desired.
