Baked Feta Pasta

8 oz (about 225g) pasta of your choice (penne, fusilli, or rigatoni work well)

1 block (about 8 oz or 225g) feta cheese

2 cups cherry tomatoes, halved

1/4 cup extra virgin olive oil

4 cloves garlic, minced

1 tsp dried oregano

1/2 tsp red pepper flakes (adjust for spice preference)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Dish: In a large baking dish, combine the halved cherry tomatoes, minced garlic, dried oregano, red pepper flakes, olive oil, salt, and pepper. Mix well to coat the tomatoes in the oil and seasonings.

      Add Feta: Place the block of feta cheese in the center of the baking dish among the tomatoes. Drizzle a little more olive oil over the feta and season with a pinch of salt and pepper.

        Bake: Bake in the preheated oven for 30 minutes, until the tomatoes are burst and the feta is soft and slightly golden.

          Cook Pasta: While the feta and tomatoes are baking, bring a large pot of salted water to a boil. Add your pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining.

            Mix It Up: Once the tomatoes and feta are done baking, remove the dish from the oven. Carefully mash the feta with a fork and mix it with the tomatoes, creating a creamy sauce.

              Combine: Add the drained pasta to the baking dish and toss everything together. If the mixture is too thick, gradually add reserved pasta water until you reach the desired consistency.

                Serve: Taste and adjust seasoning if necessary. Serve warm, garnished with fresh basil leaves and grated Parmesan cheese if desired.
