1 lb boneless, skinless chicken thighs

1 cup buttermilk

1 cup all-purpose flour

1 tsp paprika

1 tsp garlic powder

1/2 tsp cayenne pepper (adjust for heat preference)

Salt and pepper to taste

Oil for frying (vegetable or canola)

2 cups cooked jasmine rice or quinoa

1 cup shredded carrots

1 cup red cabbage, thinly sliced

1 avocado, sliced

Green onions, chopped for garnish

Sesame seeds for garnish

For the Bang Bang Sauce:

1/2 cup mayonnaise

3 tbsp sweet chili sauce

1 tbsp Sriracha (adjust for heat preference)

1 tsp lime juice

Instructions
 

Marinate the Chicken: Place the chicken thighs in a bowl and pour the buttermilk over them. Ensure the chicken is coated well and let it marinate for at least 30 minutes (or up to overnight in the fridge for more flavor).

    Prepare the Bang Bang Sauce: In a separate bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, and lime juice until smooth. Adjust the spice level to your preference. Set aside.

      Coat the Chicken: In a shallow dish, mix flour, paprika, garlic powder, cayenne pepper, salt, and pepper. Take the marinated chicken out of the buttermilk, letting any excess drip off. Dredge each piece in the seasoned flour mixture until fully coated.
