1 pound boneless, skinless chicken thighs

1 cup cornstarch

2 large eggs, beaten

1 cup panko breadcrumbs

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (or to taste)

4 cups cooked jasmine rice

2 cups mixed greens or shredded cabbage

1 cup shredded carrots

1/4 cup chopped green onions

Prepare the Chicken: Start by cutting the chicken thighs into bite-sized pieces. Pat them dry with paper towels to ensure the breading sticks well.

    Set Up Breading Station: In one bowl, place cornstarch. In a second bowl, add beaten eggs. In a third bowl, mix panko breadcrumbs with garlic powder, onion powder, paprika, salt, and black pepper.

      Bread the Chicken: Dredge each piece of chicken in the cornstarch first, shaking off the excess. Then dip in the beaten eggs, and finally coat with the seasoned panko breadcrumbs, pressing gently to adhere.
