1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces

1 cup corn starch

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 egg, lightly beaten

1 cup panko bread crumbs

Oil, for frying

2 cups cooked rice (white or brown)

1 cup shredded carrots

1 cup cucumber, thinly sliced

½ cup green onions, sliced

½ cup cilantro, chopped

Bang Bang Sauce:

½ cup mayonnaise

¼ cup sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 teaspoon lime juice

Prepare the Chicken: In a medium bowl, combine corn starch, salt, black pepper, and garlic powder. In another bowl, place the beaten egg. In a third bowl, add the panko bread crumbs.
