Ingredients
  

For the Chicken:

1 lb boneless, skinless chicken thighs

1 cup buttermilk

1 cup all-purpose flour

1 tsp garlic powder

1 tsp paprika

1/2 tsp salt

1/2 tsp black pepper

1/2 cup panko breadcrumbs

Oil for frying

For the Bang Bang Sauce:

1/2 cup mayonnaise

3 tbsp sweet chili sauce

1 tbsp sriracha (adjust for spice preference)

1 tsp lime juice

For the Bowls:

2 cups cooked jasmine rice or quinoa

2 cups mixed greens (arugula, spinach, etc.)

1 avocado, sliced

1 cup cherry tomatoes, halved

1/4 cup green onions, chopped

Sesame seeds for garnish

Instructions
 

Marinate the Chicken:

    - In a bowl, combine the buttermilk and chicken thighs. Cover and marinate in the refrigerator for at least 30 minutes or up to overnight for extra tenderness.

      Prepare the Bang Bang Sauce:

        - In a small mixing bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and lime juice until well combined. Set aside.

          Bread the Chicken:

            - In a shallow dish, combine the flour, garlic powder, paprika, salt, and pepper. In another dish, place the panko breadcrumbs.

              - Remove the chicken from the marinade and dredge each piece in the flour mixture, coating well. Shake off any excess flour, then dip it in the beaten egg (optional for extra crunch), and finally roll in the panko breadcrumbs until fully coated.

                Fry the Chicken:

                  - Heat oil in a large skillet over medium-high heat. Once the oil is hot (about 375°F), carefully add the breaded chicken pieces. Fry for about 4-5 minutes per side or until golden brown and cooked through. Remove and place on paper towels to drain excess oil.

                    Assemble the Bowls:

                      - In bowls, add a base of cooked jasmine rice or quinoa. Top with a handful of mixed greens. Slice the fried chicken and place on top.

                        - Add avocado slices and cherry tomatoes around the chicken. Drizzle generously with the Bang Bang sauce, and sprinkle with green onions and sesame seeds.
