BBQ Chicken Grilled Cheese

Ingredients
  

2 slices of thick-cut sourdough bread

1 cup cooked shredded chicken

½ cup BBQ sauce (your favorite brand)

1 cup shredded sharp cheddar cheese

¼ cup crumbled blue cheese (optional)

2 tablespoons unsalted butter

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a mixing bowl, combine the shredded chicken with the BBQ sauce. Stir until the chicken is well coated.

    Preheat a skillet over medium heat and add the olive oil.

      Spread one side of each slice of sourdough bread with butter. This will be the outer side when grilling.

        On the unbuttered side of one slice, layer half of the cheddar cheese followed by the BBQ chicken mixture, then top with the crumbled blue cheese (if using) and the remaining cheddar cheese.

          Place the other slice of bread on top, buttered side up.

            Once the skillet is hot, carefully place the sandwich in the skillet. Cook for about 3-4 minutes or until the bread is golden brown and crispy.

              Flip the sandwich carefully and cook the other side for another 3-4 minutes until the cheese is melted and the other side is golden brown.

                Remove from heat and let it sit for a minute. Cut in half and garnish with fresh parsley if desired.

                  Serve immediately and enjoy the gooey BBQ goodness!
