2 cups cooked chicken, shredded

1 cup BBQ sauce (your favorite brand)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

4 large flour tortillas

1/2 cup red onion, thinly sliced

1/2 cup corn (canned or frozen)

1/4 cup fresh cilantro, chopped (optional)

Olive oil or cooking spray (for frying)

Sour cream and guacamole (for serving)

Prepare the Chicken: In a mixing bowl, combine the shredded chicken with BBQ sauce, ensuring it's evenly coated. If you like it spicy, feel free to add a dash of hot sauce!

    Assemble the Quesadilla: Take one flour tortilla and sprinkle about 1/4 cup of cheddar cheese on half of the tortilla. Layer 1/2 cup of the BBQ chicken mixture on top, followed by 1/4 cup of mozzarella cheese, a few slices of red onion, and a spoonful of corn.
