1 pound flank steak, thinly sliced against the grain

3 tablespoons oyster sauce

2 tablespoons soy sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

3 cloves garlic, minced

1 inch piece ginger, grated

1 bell pepper (red or green), sliced

1 cup broccoli florets

1 carrot, thinly sliced

2 green onions, chopped

1 tablespoon sesame oil

Salt and pepper to taste

Cooked jasmine rice or noodles for serving

Marinate the Beef: In a bowl, combine the flank steak with the oyster sauce, soy sauce, and cornstarch. Mix well and let it marinate for at least 30 minutes to an hour for better flavor.

    Prepare the Vegetables: While the beef is marinating, prepare your vegetables by washing and slicing the bell pepper, broccoli, and carrot. Set aside.

      Heat the Pan: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering.

        Cook the Beef: Add the marinated beef to the hot skillet in a single layer. Sear for about 2-3 minutes until browned but not fully cooked. Remove the beef from the skillet and set aside.

          Stir-Fry the Vegetables: In the same skillet, add the minced garlic, grated ginger, and sliced bell pepper. Stir-fry for about 1 minute. Then add the broccoli and carrot, cooking for an additional 2-3 minutes until the vegetables are tender-crisp.

            Combine and Finish Cooking: Return the seared beef to the skillet, along with any accumulated juices. Stir everything together, and let it cook for another 2-3 minutes, until the beef is cooked through and the vegetables are vibrant. Drizzle with sesame oil and toss in the chopped green onions.
