Best-Ever Chicken Carbonara

Ingredients
  

12 oz spaghetti or fettuccine

2 tablespoons olive oil

1 lb boneless, skinless chicken breasts, diced

Salt and pepper, to taste

4 slices of thick-cut pancetta or bacon, chopped

4 large eggs

1 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon freshly cracked black pepper

1/4 cup fresh parsley, chopped (for garnish)

Additional Parmesan cheese, for serving

Instructions
 

Cook the Pasta:

    In a large pot of salted boiling water, cook the spaghetti or fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

      Prepare the Chicken:

        In a large skillet over medium heat, heat the olive oil. Season the diced chicken with salt and pepper. Add the chicken to the skillet and cook until golden and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

          Cook the Pancetta:

            In the same skillet, add the chopped pancetta or bacon and sauté until crispy, about 3-4 minutes. Add the minced garlic and cook for an additional minute, stirring constantly to prevent burning.

              Combine Ingredients:

                Return the cooked chicken to the skillet and mix well with the pancetta. Lower the heat and add the drained pasta to the skillet, tossing to combine.

                  Make the Sauce:

                    In a separate bowl, whisk together the eggs, grated Parmesan cheese, and cracked black pepper. Remove the skillet from the heat and quickly pour the egg mixture over the pasta, tossing to coat. The residual heat will cook the eggs gently and create a creamy sauce. If the sauce is too thick, add some reserved pasta water a little at a time to reach your desired consistency.
