Biscuits and Chorizo Gravy

Ingredients
  

For the Biscuits:

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1/4 cup cold unsalted butter, cubed

1 cup buttermilk

For the Chorizo Gravy:

1 tablespoon olive oil

8 ounces fresh chorizo, casings removed

1/4 cup all-purpose flour

2 cups whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Chopped fresh parsley for garnish (optional)

Instructions
 

Prepare the Biscuits:

    - Preheat your oven to 450°F (230°C).

      - In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.

        - Add the cold cubed butter. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

          - Make a well in the center and pour in the buttermilk. Stir gently until just combined; do not overmix.

            - Turn the dough onto a lightly floured surface. Pat it into a rectangle, about 1 inch thick. Fold it over itself two or three times, then pat it back out to about 1 inch thick again.

              - Cut out biscuits using a floured biscuit cutter and place them on a baking sheet. Bake for 12-15 minutes or until golden brown.

                Prepare the Chorizo Gravy:

                  - In a large skillet, heat the olive oil over medium heat. Add the chorizo and cook until browned, breaking it up with a wooden spoon (about 5-7 minutes).

                    - Once cooked, sprinkle the flour over the chorizo and stir to combine. Cook for another minute.

                      - Gradually whisk in the milk, ensuring there are no lumps. Continue cooking until the gravy thickens (about 5 minutes).

                        - Stir in the garlic powder, onion powder, and season with salt and pepper to taste. If the gravy is too thick, add a little more milk to reach your desired consistency.

                          Serve:

                            - Split the biscuits in half and spoon the warm chorizo gravy generously over the top. Garnish with chopped parsley if desired.
