1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

1 tablespoon black pepper, coarsely ground

2 tablespoons soy sauce

1 tablespoon oyster sauce

2 teaspoons cornstarch

2 tablespoons vegetable oil

1 medium onion, sliced

1 red bell pepper, sliced

2-3 green onions, chopped (for garnish)

4 cloves garlic, minced

1-inch piece of ginger, grated

1 tablespoon rice vinegar

1 teaspoon sugar

Marinate the Chicken: In a mixing bowl, combine the chicken pieces with soy sauce, oyster sauce, cornstarch, and half of the black pepper. Mix well, cover, and let marinate for at least 30 minutes.

    Prepare the Stir-Fry: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken in a single layer. Sear for about 5-7 minutes, tossing occasionally until the chicken is browned and cooked through. Remove chicken from the pan and set aside.

      Sauté Vegetables: In the same skillet, add a bit more oil if necessary. Sauté the sliced onion and bell pepper until they're slightly tender, about 3-4 minutes. Add the minced garlic and grated ginger and stir-fry for an additional minute until fragrant.

        Combine Ingredients: Return the cooked chicken to the pan. Add the remaining black pepper, rice vinegar, sugar, and salt to taste. Toss everything together for another 2-3 minutes to ensure the flavors meld.
