Ingredients

8 oz bow tie pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, chopped

1/4 cup red onion, finely chopped

1/2 cup black olives, sliced

1/2 cup feta cheese, crumbled

1/3 cup fresh basil, chopped

1/4 cup olive oil

2 tbsp red wine vinegar

1 tsp garlic powder

Salt and pepper to taste

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the bow tie pasta according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

Prepare the Vegetables: While the pasta is cooling, prepare the vegetables. In a large mixing bowl, combine the cherry tomatoes, cucumber, red bell pepper, red onion, and black olives.

Make the Dressing: In a separate small bowl, whisk together the olive oil, red wine vinegar, garlic powder, salt, and pepper. Adjust the seasoning to taste.

Combine Ingredients: Once the pasta is cool, add it to the bowl with the vegetables. Pour the dressing over the pasta and vegetables, and gently toss to combine.

Add Cheese and Basil: Fold in the crumbled feta cheese and chopped basil, stirring gently to incorporate everything without breaking up the feta.

Chill and Serve: For the best flavor, cover the pasta salad and let it chill in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld together. Serve cold as a side dish or a light meal.
