2 large carrots, peeled and grated

1 large apple (Granny Smith or Honeycrisp), cored and grated

1/4 cup raisins or dried cranberries

1/4 cup walnuts, chopped

1/4 cup Greek yogurt or vegan yogurt

1 tablespoon honey or maple syrup (optional for sweetness)

1 tablespoon lemon juice

1/2 teaspoon cinnamon

Salt and pepper to taste

Fresh parsley for garnish (optional)

Prepare the Vegetables and Fruit: Grate the carrots and apple using a box grater or food processor. Place them in a large mixing bowl.
