Carrot Cake Oatmeal

Ingredients
  

1 cup rolled oats

2 cups almond milk (or any milk of choice)

1 medium carrot, grated

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 cup maple syrup (or honey)

1/4 cup raisins (optional)

1/4 cup chopped walnuts (optional)

1 teaspoon vanilla extract

Pinch of salt

Cream cheese or yogurt (for topping, optional)

Shredded coconut (for garnish, optional)

Instructions
 

In a medium saucepan, combine the rolled oats, almond milk, grated carrot, cinnamon, nutmeg, maple syrup, and a pinch of salt.

    Place the saucepan over medium heat and bring the mixture to a simmer, stirring occasionally.

      Once it starts simmering, reduce the heat to low and let it cook for about 5-7 minutes, or until the oats are cooked to your desired consistency.

        Stir in the vanilla extract and continue stirring for another minute. If you'd like to add raisins and walnuts, mix them in at this stage.

          Remove the oatmeal from heat and pour it into serving bowls.

            If desired, top with a dollop of cream cheese or yogurt, and sprinkle with shredded coconut for added texture and flavor.
