1 lb ground beef

1 cup onion, finely chopped

2 cloves garlic, minced

1 tsp cumin

1 tsp chili powder

1 tsp paprika

1 cup shredded cheddar cheese

4 large flour tortillas

1 cup sour cream

1 cup salsa

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

For the Crispy Fries:

2 large russet potatoes

3 tbsp olive oil

1 tsp garlic powder

1 tsp smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Fries:

    - Preheat your oven to 425°F (220°C).

      - Wash and peel the russet potatoes, then cut them into thin strips or wedges.

        - In a large bowl, toss the potato fries with olive oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.

          - Spread them out in a single layer on a baking sheet lined with parchment paper and bake for about 30-35 minutes, flipping halfway through, until golden and crispy.

            Cook the Beef Mixture:

              - In a large skillet over medium heat, add the ground beef and onion. Cook until the beef is browned and crumbly, about 5-7 minutes.

                - Drain excess grease if necessary, then add the minced garlic, cumin, chili powder, paprika, salt, and pepper. Stir to combine and cook for another 2-3 minutes until fragrant.

                  - Remove from heat and stir in the shredded cheddar cheese until melted and well-mixed.

                    Assemble the Burritos:

                      - Lay each flour tortilla on a flat surface. Spoon the cheesy beef mixture down the center of each tortilla.

                        - Add a dollop of sour cream and a spoon of salsa on top, then fold the sides of the tortilla in and roll it from the bottom up to enclose the filling.
