1 can (15 oz) kidney beans, drained and rinsed

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 green chili, chopped (adjust to taste)

1 teaspoon ground cumin

1 teaspoon ground coriander

½ teaspoon garam masala

¼ teaspoon turmeric powder

Salt to taste

Black pepper to taste

1 cup diced tomatoes (fresh or canned)

½ cup shredded cheese (cheddar or your choice)

4 slices of whole grain or sourdough bread

Fresh cilantro for garnish (optional)

Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent (about 3-4 minutes). Add the garlic and green chili, cooking for an additional minute.

    Add Spices: Stir in the cumin, coriander, garam masala, turmeric, salt, and black pepper. Cook the spices for about 30 seconds until fragrant.
