2 cups cooked chicken, shredded

1 ripe avocado, peeled and mashed

1/2 cup plain Greek yogurt

1 tablespoon Dijon mustard

1 tablespoon fresh lemon juice

1 teaspoon garlic powder

Salt and pepper to taste

4 slices whole grain bread

1 cup shredded cheddar cheese

1/2 cup sliced tomatoes

1/4 cup chopped fresh cilantro (optional)

Butter for spreading on the bread

In a medium bowl, combine the shredded chicken, mashed avocado, Greek yogurt, Dijon mustard, lemon juice, garlic powder, salt, and pepper. Mix until smooth and well-combined.

    Preheat a skillet or griddle over medium-low heat.

      Generously butter one side of each slice of bread.

        On the non-buttered side of two slices, spread a generous portion of the chicken and avocado mixture.
