Ingredients
  

1 lb ground chicken

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

1/2 tsp black pepper

1/2 tsp salt

1/4 cup fresh parsley, chopped

1 tbsp olive oil

1 red bell pepper, cut into squares

1 zucchini, sliced into rounds

1 cup cherry tomatoes

Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

Chimichurri Sauce:

1/2 cup fresh parsley

1/4 cup fresh cilantro

2 cloves garlic

1/2 tsp red pepper flakes

1/3 cup olive oil

2 tbsp red wine vinegar

Salt and pepper to taste

Instructions
 

In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, garlic powder, onion powder, smoked paprika, black pepper, and salt. Mix until well incorporated.

    Preheat your grill or grill pan over medium heat.

      Form the chicken mixture into sausage-shaped logs and thread them onto skewers. Add chunks of red bell pepper, zucchini rounds, and cherry tomatoes onto the skewers, alternating with the sausage.

        In a small bowl, whisk together all ingredients for the chimichurri sauce until well combined. Adjust salt and pepper to your taste.

          Once the grill is hot, lightly coat the skewers with olive oil to prevent sticking. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

            Remove from the grill and let them rest for a couple of minutes.

              Serve the chicken sausage skewers drizzled with chimichurri sauce, garnished with extra parsley if desired.
