This recipe combines al dente elbow macaroni with flavorful ground beef or turkey, black and kidney beans, and zesty diced tomatoes. Seasoned with chili powder and cumin, it’s a flavor explosion. Topped with melty cheddar cheese and fresh cilantro, this dish is perfect for family dinners. Quick to prepare in just 45 minutes, it serves six and is sure to please everyone!

Ingredients
  

1 lb elbow macaroni

1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (28 oz) diced tomatoes with green chilies

2 tbsp chili powder

1 tsp cumin

Salt and pepper to taste

2 cups shredded cheddar cheese

1 cup beef broth (or vegetable broth)

1 tbsp olive oil

Fresh cilantro, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Brown the Meat: In a large skillet or Dutch oven, heat olive oil over medium-high heat. Add the diced onion and sauté for about 2-3 minutes until translucent. Add the minced garlic and cook for an additional minute.

      Add the Protein: Add the ground beef (or turkey) to the skillet. Cook until browned and cooked through, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat, if necessary.

        Combine & Season: Stir in the chili powder, cumin, salt, and pepper. Mix well to evenly coat the meat. Then, add the black beans, kidney beans, diced tomatoes with their juices, and beef broth. Bring the mixture to a simmer.

          Incorporate the Macaroni: Add the cooked macaroni to the skillet, stirring to combine all ingredients. Let simmer for another 5-10 minutes, allowing the flavors to meld.

            Add the Cheese: Remove from heat and stir in 1.5 cups of shredded cheddar cheese until melted and creamy. Reserve the remaining 0.5 cup of cheese for topping.

              Serve: Dish out the cheesy chili mac into bowls, sprinkle with reserved cheese, and garnish with fresh cilantro. Enjoy!
