4 cups French bread (cut into cubes)

4 large eggs

1 cup milk (whole or your preference)

1/2 cup granulated sugar

1 tsp vanilla extract

1 1/2 tsp ground cinnamon (plus extra for sprinkling)

1/4 tsp nutmeg

1/2 cup unsalted butter (melted)

1/4 cup brown sugar (packed)

Pinch of salt

Optional: maple syrup for serving

Preheat Oven: Begin by preheating your oven to 350°F (175°C). Grease a muffin tin with non-stick spray or butter.

    Prepare the Bread: In a large mixing bowl, add the cubed French bread and set aside. If the bread is slightly stale, it will absorb the custard better.

      Make the Custard: In another bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, ground cinnamon, nutmeg, and a pinch of salt until well combined.

        Combine: Pour the custard mixture over the bread cubes. Gently fold the mixture to ensure all the bread is well coated, allowing it to soak for about 10-15 minutes.

          Fill Muffin Tin: Spoon the soaked bread mixture into the prepared muffin tin, filling each cup about 3/4 full to allow for rising.

            Prepare the Topping: In a small bowl, mix the melted butter, brown sugar, and additional ground cinnamon. Drizzle this mixture over the filled muffin cups for a sweet topping.

              Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted in the center comes out clean.

                Cool: Once out of the oven, allow the muffins to cool in the tin for about 5 minutes before gently removing them. They can be enjoyed warm or at room temperature.
