Ingredients

1 lb chicken sausage (sliced)

1 cup orzo pasta

1 medium onion (chopped)

3 garlic cloves (minced)

1 bell pepper (diced)

2 cups spinach (fresh)

4 cups chicken broth

1 cup heavy cream

1 teaspoon Italian seasoning

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

½ cup grated Parmesan cheese

Fresh parsley (for garnish)

Instructions

In a large skillet, heat olive oil over medium heat. Add the sliced chicken sausage and cook until browned, about 5-7 minutes. Remove from the skillet and set aside.

In the same skillet, add the chopped onion and bell pepper. Sauté until the onion becomes translucent, about 3-4 minutes.

Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

Stir in the orzo pasta, then pour in the chicken broth. Bring to a boil, then reduce heat to a simmer. Cook for about 10 minutes, stirring occasionally, until the orzo is tender and has absorbed most of the broth.

Once the orzo is cooked, add the cooked chicken sausage back to the skillet along with the fresh spinach, heavy cream, Italian seasoning, paprika, salt, and pepper. Stir until the spinach wilts and everything is well combined.

Remove from heat and stir in the grated Parmesan cheese until creamy.

Garnish with fresh parsley before serving.
