Creamy Garlic Butter Chicken and Rotini in Parmesan Sauce

1 lb (450g) rotini pasta

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

4 tablespoons unsalted butter

5 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup fresh spinach (optional)

2 tablespoons chopped fresh parsley (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set it aside.

    Cook the Chicken: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the chicken pieces, season with salt, pepper, and Italian seasoning, and cook until golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

      Sauté the Garlic: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to let it burn.

        Create the Sauce: Lower the heat and pour in the heavy cream, stirring to combine. Allow the mixture to simmer gently for about 2-3 minutes. Stir in the grated Parmesan cheese until melted and creamy. If the sauce is too thick, add a splash of reserved pasta water until you reach your desired consistency.
