Ingredients
  

1 lb flank steak (or your preferred cut)

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

Salt and pepper, to taste

1 cup quinoa or brown rice, cooked

1 cup black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 avocado, sliced

1 cup cherry tomatoes, halved

1 cup shredded lettuce or spinach

½ cup shredded cheese (cheddar, queso fresco, or your choice)

Fresh cilantro, for garnish

Lime wedges, for serving

Optional toppings: sour cream, salsa, hot sauce, pickled jalapeños

Instructions
 

Prepare the Steak: In a small bowl, mix the olive oil, minced garlic, smoked paprika, ground cumin, salt, and pepper. Rub this mixture over the flank steak and let it marinate for at least 30 minutes, or up to overnight in the fridge for deeper flavor.
