Crispy Bang Bang Salmon Bites (Sweet & Spicy)

1 lb fresh salmon fillet, skinless and boneless

1 cup panko breadcrumbs

½ cup all-purpose flour

2 large eggs, beaten

1 tsp garlic powder

1 tsp paprika

½ tsp salt

½ tsp black pepper

½ cup mayonnaise

2 tbsp sriracha

1 tbsp honey

1 tbsp rice vinegar

1 tbsp lime juice

Chopped green onions and sesame seeds for garnish

Vegetable oil for frying

Prepare the Salmon: Cut the salmon fillet into bite-sized cubes (about 1 inch). Pat the pieces dry with paper towels to ensure they get crispy when cooked.

    Set Up the Breading Station: In three separate bowls, place the flour mixed with garlic powder, paprika, salt, and pepper in the first bowl. In the second bowl, add the beaten eggs, and in the third bowl, pour in the panko breadcrumbs.

      Bread the Salmon: Dredge each salmon piece in the flour mixture, shaking off any excess. Then dip it into the beaten eggs, allowing the excess to drip off. Finally, coat the salmon well in panko breadcrumbs, pressing gently to adhere.

        Fry the Bites: Heat approximately 1/2 inch of vegetable oil in a large skillet over medium heat. Once the oil is hot (about 350°F), carefully add the salmon bites in batches to avoid overcrowding. Fry for about 2-3 minutes on each side or until golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.

          Make the Bang Bang Sauce: In a small bowl, mix together the mayonnaise, sriracha, honey, rice vinegar, and lime juice until smooth. Adjust the spiciness to your liking by adding more sriracha if desired.

            Serve: Arrange crispy salmon bites on a serving platter. Drizzle with the Bang Bang sauce or serve it on the side for dipping. Garnish with chopped green onions and sesame seeds for an extra pop of flavor and color.
