500g beef flank, thinly sliced against the grain

1 cup cornstarch

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/2 cup vegetable oil (for frying)

1 red bell pepper, sliced into thin strips

1 green bell pepper, sliced into thin strips

2 spring onions, chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

2 tablespoons soy sauce

4 tablespoons sweet chilli sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 tablespoon sesame seeds (for garnish)

Prepare the Beef: In a mixing bowl, combine the cornstarch, salt, black pepper, garlic powder, and onion powder. Toss the sliced beef in this mixture until well coated. Allow it to sit for about 15 minutes to tenderize.

    Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering. This is crucial for achieving a crispy texture.

      Fry the Beef: Carefully add the coated beef slices in batches to avoid overcrowding. Fry for 3-4 minutes on each side until golden and crispy. Remove the beef and drain on paper towels to absorb excess oil.

        Sauté the Vegetables: In the same skillet, remove excess oil leaving about 1 tablespoon, and add the minced garlic and ginger. Sauté for 30 seconds until fragrant. Then, add the sliced bell peppers and stir fry for about 2 minutes until they start to soften.

          Combine Sauces: In a small bowl, mix the soy sauce, sweet chilli sauce, rice vinegar, and sesame oil. Pour this mixture into the skillet and stir well to combine with the vegetables.

            Add the Beef: Return the crispy beef to the skillet, tossing to coat everything evenly with the sauce. Cook for an additional 1-2 minutes until the beef is heated through.

              Garnish and Serve: Remove from heat, sprinkle with chopped spring onions and sesame seeds. Serve immediately with steamed rice or noodles.
