1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1/2 cup all-purpose flour

1/2 cup cornstarch

1 tsp baking powder

1 tsp salt

1/2 tsp black pepper

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 cup cold water

Vegetable oil for frying

1/4 cup honey

1/4 cup soy sauce

3 cloves garlic, minced

1 tsp fresh ginger, grated

1 tbsp sesame oil

1 tsp rice vinegar

Sesame seeds and chopped green onions for garnish

Instructions
 

Prepare the Chicken: In a mixing bowl, combine flour, cornstarch, baking powder, salt, pepper, garlic powder, and onion powder. Gradually whisk in the cold water until the batter is smooth and thick.

    Coat the Chicken: Add the chicken pieces to the batter, ensuring they are well-coated. Let it sit for about 5 minutes to absorb the flavors.

      Heat the Oil: In a large, deep skillet or wok, heat about 1 inch of vegetable oil over medium-high heat until hot but not smoking (around 350°F or 175°C).

        Fry the Chicken: Carefully drop the battered chicken pieces into the hot oil in batches. Fry until they are golden brown and crispy, approximately 4-5 minutes per batch. Remove them from the oil and place on paper towels to drain excess oil.

          Make the Sauce: In a separate pan, combine honey, soy sauce, minced garlic, grated ginger, sesame oil, and rice vinegar. Bring to a simmer over medium heat, stirring frequently until the sauce slightly thickens, about 3-4 minutes.

            Combine: Once all the chicken is fried, add it to the sauce and toss until the pieces are evenly coated.
