Crispy Hot Honey Feta Chicken

4 boneless, skinless chicken breasts

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crispiness)

1/2 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon chili powder (adjust for desired heat)

1/2 cup feta cheese, crumbled

1/2 cup hot honey

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare three shallow bowls: In the first bowl, place the flour mixed with salt, black pepper, garlic powder, onion powder, smoked paprika, and chili powder. In the second bowl, beat the eggs. In the third bowl, place the breadcrumbs.

      Take each chicken breast and dip it into the flour mixture, shaking off any excess. Then, dip it into the eggs, allowing any excess to drip off, followed by the breadcrumbs, pressing gently to ensure an even coating.

        Place the coated chicken breasts onto the prepared baking sheet. Lightly spray or drizzle with olive oil to enhance crispiness.

          Bake in the oven for 25-30 minutes, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 75°C).

            While the chicken is baking, warm the hot honey in a small saucepan over low heat, just until it’s runny. Stir in the crumbled feta cheese until well mixed.

              Once the chicken is done, remove it from the oven and drizzle the hot honey-feta mixture generously over each chicken breast.

                Garnish with fresh parsley for a pop of color and serve immediately. This dish pairs wonderfully with roasted vegetables or a light salad.
