Ingredients

4 boneless, skinless chicken thighs

1 cup feta cheese, crumbled

1/3 cup honey

1 teaspoon chili flakes (adjust for spice preference)

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon salt

1 teaspoon black pepper

1 cup all-purpose flour (for dredging)

2 large eggs, beaten

1 cup panko breadcrumbs

Vegetable oil (for frying)

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Marinate the Chicken: In a bowl, mix garlic powder, smoked paprika, salt, and pepper. Season the chicken thighs with this spice mixture and let them marinate for about 30 minutes to 1 hour.

Prepare the Honey Feta Glaze: In a small saucepan over low heat, combine the honey and chili flakes. Stir until heated through and well mixed. Remove from heat and fold in the crumbled feta cheese. Set aside.

Dredging Station: Set up three shallow dishes: one with flour, one with the beaten eggs, and the last with panko breadcrumbs.

Coat the Chicken: Take each marinated chicken thigh and first dip it in the flour, shaking off the excess. Then, dip it into the beaten eggs, and finally coat it evenly with the panko breadcrumbs.

Heat the Oil: In a large skillet, heat about 1/2 inch of vegetable oil over medium-high heat until hot but not smoking.

Fry the Chicken: Carefully add the breaded chicken thighs to the oil. Fry in batches, without overcrowding the pan, for about 5-7 minutes per side or until golden brown and cooked through. Place the fried chicken on a paper towel-lined plate to drain excess oil.

Glaze the Chicken: Once all chicken is fried, return it to the skillet over low heat. Drizzle the honey feta glaze over the crispy chicken, allowing it to warm slightly and adhere.

Serve: Plate the crispy hot honey feta chicken and garnish with freshly chopped parsley. Serve with lemon wedges on the side for squeezing over the top.
