For the pastry dough:

3 cups all-purpose flour

1/2 cup cold unsalted butter, cubed

1 teaspoon salt

1 teaspoon turmeric powder

6-8 tablespoons cold water

For the beef filling:

1 lb ground beef

1 small onion, finely chopped

2 garlic cloves, minced

1 small carrot, grated

1 green bell pepper, finely chopped

1 teaspoon thyme

1 teaspoon allspice

1 teaspoon paprika

1/2 teaspoon Scotch bonnet pepper, minced (adjust for spice level)

Salt and pepper to taste

1 tablespoon soy sauce

1 tablespoon tomato ketchup

1 tablespoon vegetable oil

Make the pastry dough: In a large mixing bowl, combine the flour, salt, and turmeric powder. Add the cold butter and rub it into the flour until the mixture resembles coarse crumbs. Gradually add cold water, one tablespoon at a time, mixing with your hands until a smooth dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.

    Prepare the beef filling: In a skillet over medium heat, add vegetable oil. Sauté the onion, garlic, and bell pepper until softened, about 3-4 minutes. Add the ground beef, breaking it apart with a spoon, and cook until browned.

      Season the mixture: Stir in the grated carrot, thyme, allspice, paprika, Scotch bonnet pepper, soy sauce, ketchup, salt, and pepper. Cook for an additional 5–7 minutes until the mixture is well-combined and flavorful. Remove from heat and let it cool.

        Assemble the patties: Preheat your oven to 350°F (175°C). On a floured surface, roll out the pastry into a thin sheet (about 1/8-inch thick). Cut out 4-5 inch circles using a round cutter. Place 1-2 tablespoons of the beef filling in the center of each circle.

          Seal the patties: Moisten the edges of the pastry with water, fold it over in half to create a semi-circle, and press the edges to seal securely. Use a fork to crimp the edges, creating a decorative pattern.

            Bake the patties: Place the filled patties on a parchment-lined baking sheet. Bake in the preheated oven for about 25-30 minutes, or until golden brown.

              Serve: Let the patties cool for a few minutes before serving. Enjoy them hot or at room temperature, paired with your favorite dipping sauce!
