Easy Asian Cucumber Salad

Ingredients
  

3 medium cucumbers, thinly sliced

1 tablespoon salt

3 tablespoons rice vinegar

1 tablespoon soy sauce

2 teaspoons sesame oil

1 teaspoon sugar (or honey)

1 garlic clove, minced

1 teaspoon grated fresh ginger

1 small red chili, thinly sliced (optional for heat)

2 tablespoons fresh cilantro, chopped

1 tablespoon toasted sesame seeds

Instructions
 

Prepare the Cucumbers: Place the sliced cucumbers in a colander and sprinkle them with salt. Allow them to sit for about 15-20 minutes to draw out excess moisture.

    Make the Dressing: In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar (or honey), minced garlic, grated ginger, and sliced chili if using.

      Rinse and Drain: After the cucumbers have released some water, rinse them under cold water to remove excess salt, then gently pat them dry with a paper towel.

        Combine Ingredients: In a large bowl, combine the drained cucumbers and the dressing. Toss gently to coat all the cucumber slices evenly.

          Garnish and Serve: Sprinkle chopped cilantro and toasted sesame seeds over the top. Toss lightly again, and serve immediately or refrigerate for 10 minutes to let flavors meld.
