1 lb boneless, skinless chicken breasts

2 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon ground cumin

1 teaspoon chipotle chili powder

Salt and pepper to taste

1 cup shredded lettuce

1 cup diced tomatoes

1 cup shredded cheese (cheddar or Mexican blend)

1/2 cup chipotle ranch dressing

4 large flour tortillas

Fresh cilantro for garnish (optional)

Lime wedges for serving (optional)

Instructions
 

Marinate the Chicken: In a bowl, mix the olive oil, smoked paprika, garlic powder, onion powder, ground cumin, chipotle chili powder, salt, and pepper. Add the chicken breasts and ensure they are well coated. Let them marinate for at least 30 minutes, or up to overnight in the refrigerator.

    Grill the Chicken: Preheat the grill to medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C). Remove from the grill and let rest for a few minutes.

      Slice the Chicken: Once rested, slice the grilled chicken into strips.

        Prepare the Tortillas: Warm the flour tortillas on the grill or in a skillet for about 30 seconds on each side until soft and pliable.
