Ingredients

4 boneless, skinless chicken thighs

1 cup unsalted butter, softened

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon onion powder

1 teaspoon chili powder

1 tablespoon Worcestershire sauce

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

1 lemon, juiced

Instructions

Prepare Cowboy Butter: In a medium bowl, mix together the softened butter, minced garlic, smoked paprika, dried thyme, onion powder, chili powder, Worcestershire sauce, lemon juice, salt, and pepper until well combined. Set aside a third of the mixture for serving.

Season Chicken: Pat the chicken thighs dry with paper towels and season them with a sprinkle of salt and pepper on both sides.

Sear Chicken: Heat a large skillet over medium-high heat. Add half of the cowboy butter mixture to the pan. Once melted, add the chicken thighs, cooking for about 4-5 minutes on each side until they are golden brown and cooked through. Ensure the internal temperature of the chicken reaches 165°F (75°C).

Baste Chicken: During the last couple of minutes of cooking, spoon some of the remaining cowboy butter over the chicken to enhance the flavor.

Serve: Remove the chicken from the skillet and place it on a serving platter. Drizzle the reserved cowboy butter over the top and garnish with chopped parsley.

Enjoy!: This dish pairs wonderfully with a side of rice, mashed potatoes, or fresh vegetables.
