Easy Cowboy Butter Chicken Linguine

8 oz linguine pasta

1 lb boneless, skinless chicken thighs, diced

4 tbsp unsalted butter

2 cloves garlic, minced

1 tbsp smoked paprika

1 tbsp dried oregano

1 tsp cayenne pepper (adjust to taste)

1 tsp salt

1/2 tsp black pepper

1 cup chicken broth

1/2 cup heavy cream

1 cup cherry tomatoes, halved

1/2 cup fresh parsley, chopped

Juice of 1 lemon

Grated Parmesan cheese for serving

Cook the Pasta: In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

    Cook the Chicken: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the diced chicken thighs, season with smoked paprika, oregano, cayenne pepper, salt, and pepper. Cook until the chicken is browned and cooked through, about 7-10 minutes. Remove the chicken from the skillet and set aside.

      Make the Cowboy Butter Sauce: In the same skillet, add the remaining 2 tablespoons of butter and minced garlic. Sauté for about 1 minute until fragrant.

        Add the Liquid Ingredients: Pour in the chicken broth and bring to a simmer. Stir in the heavy cream and bring the sauce to a gentle simmer, allowing it to thicken for about 3-5 minutes.

          Combine Everything: Add the chicken back into the skillet along with the cherry tomatoes. Stir well to coat all ingredients in the sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
