1 cup cherry tomatoes, halved

8 ounces fresh mozzarella cheese, cut into small cubes

1/4 cup fresh basil leaves, torn

2 tablespoons balsamic glaze

2 tablespoons extra virgin olive oil

Salt and pepper to taste

Instructions

Start by washing the cucumbers and cherry tomatoes thoroughly.

Peel the cucumbers if desired, then slice them into thin rounds.

In a large mixing bowl, combine the sliced cucumbers, halved cherry tomatoes, and cubed mozzarella cheese.

Tear the fresh basil leaves and sprinkle them over the salad mixture.

Drizzle the balsamic glaze and extra virgin olive oil over the salad.

Gently toss everything together until well combined. Be careful not to mash the mozzarella.

Season with salt and pepper to taste, adjusting as necessary.

Let the salad sit for about 10 minutes to let the flavors meld together before serving.
