Easy Spinach and Ricotta Stuffed Shells – A Healthy Veggie Dinner

12 large pasta shells

1 cup ricotta cheese

1 cup fresh spinach, chopped

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese (plus extra for topping)

1 egg, beaten

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

2 cups marinara sauce

Fresh basil, for garnish (optional)

Instructions
 

Cook the Shells: Boil a large pot of salted water. Add the pasta shells and cook according to package instructions until al dente. Drain and set aside to cool slightly.

    Prepare the Filling: In a medium bowl, mix the ricotta cheese, chopped spinach, half of the Parmesan cheese, half of the mozzarella cheese, the beaten egg, garlic powder, onion powder, salt, and pepper until well combined.

      Stuff the Shells: Using a spoon, generously fill each cooked pasta shell with the ricotta and spinach mixture. Place the stuffed shells in a greased 9x13 inch baking dish.

        Add the Sauce: Pour the marinara sauce evenly over the stuffed shells. Sprinkle the remaining mozzarella cheese and Parmesan cheese on top.

          Bake: Preheat the oven to 375°F (190°C). Cover the baking dish with aluminum foil and bake for 20 minutes. Then, remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.

            Garnish and Serve: Once baked, remove from the oven and let cool for a few minutes. Garnish with fresh basil if desired and serve warm.
