Easy Spinach & Ricotta Stuffed Shells

20-24 jumbo pasta shells

2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)

15 oz ricotta cheese

1 cup shredded mozzarella cheese (plus more for topping)

1/2 cup grated Parmesan cheese

1 large egg

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

2 cups marinara sauce (store-bought or homemade)

Fresh basil or parsley for garnish (optional)

Instructions
 

Cook the Pasta Shells: In a large pot of salted boiling water, cook the jumbo pasta shells according to package directions until al dente. Drain and set aside to cool slightly.

    Prepare the Filling: In a large mixing bowl, combine the chopped spinach, ricotta cheese, 1 cup of mozzarella cheese, Parmesan cheese, egg, garlic powder, onion powder, salt, and black pepper. Mix until well combined and set aside.

      Fill the Shells: Preheat your oven to 375°F (190°C). Carefully stuff each cooked pasta shell with the spinach and ricotta mixture, using a spoon or a piping bag for ease.

        Assemble the Dish: Spread 1 cup of marinara sauce on the bottom of a 9x13 inch baking dish. Arrange the stuffed shells in a single layer over the sauce. Pour the remaining marinara sauce over the top of the shells, then sprinkle with additional mozzarella cheese.

          Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

            Serve: Remove from the oven and let cool for a few minutes before serving. Garnish with fresh basil or parsley if desired.
