12 oz (340g) penne pasta

2 tablespoons olive oil

1 lb (450g) chicken breast, diced

4 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

1 cup cherry tomatoes, halved

1 cup spinach or kale, roughly chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken: In a large skillet over medium heat, add olive oil. Once hot, add the diced chicken, season with salt, pepper, and Italian seasoning. Cook until the chicken is browned and cooked through, approximately 6-8 minutes.

      Add Garlic and Tomatoes: Add the minced garlic and red pepper flakes (if using) to the skillet. Sauté for about 1 minute until fragrant. Add the cherry tomatoes and cook for an additional 3-4 minutes until they start to soften.

        Add Spinach and Cream: Stir in the chopped spinach or kale and allow it to wilt, then pour in the heavy cream. Stir well to combine and bring to a gentle simmer.

          Combine Pasta and Sauce: Add the cooked penne pasta to the skillet, along with the grated Parmesan cheese. Toss everything together ensuring that the pasta is well coated in the creamy sauce. Check for seasoning and adjust with more salt and pepper as needed.
