Fiery Chicken Ramen with Creamy Garlic Sauce

This fiery chicken ramen with creamy garlic sauce is the perfect blend of spicy and rich flavors. Start by marinating tender chicken thighs in chili paste and soy sauce, then cook them in chicken broth while you prepare rich and luscious garlic cream sauce. Toss everything together with instant ramen noodles, shiitake mushrooms, and fresh spinach for a cozy meal. Top with green onions and your favorite toppings for an extra flavor kick. Ingredients
  

2 boneless, skinless chicken thighs

2 tablespoons chili paste (sambal oelek or gochujang)

1 tablespoon soy sauce

1 tablespoon sesame oil

Salt and pepper, to taste

4 cups chicken broth

2 packs of instant ramen noodles (discard seasoning packets)

1 cup shiitake mushrooms, sliced

1 cup baby spinach

2 green onions, sliced

2 large eggs

4 cloves garlic, minced

1 cup heavy cream

1 tablespoon lemon juice

Optional toppings: chili flakes, nori sheets, sesame seeds

Instructions
 

In a mixing bowl, combine the chicken thighs with chili paste, soy sauce, sesame oil, salt, and pepper. Let marinate for at least 30 minutes for enhanced flavor.

    In a large pot, bring the chicken broth to a simmer over medium heat.

      Add the marinated chicken thighs to the broth and cook for about 10-12 minutes or until cooked through. Remove the chicken and let it cool slightly.

        In the same pot, add the ramen noodles and shiitake mushrooms to the simmering broth. Cook according to the ramen package instructions, usually about 3-4 minutes.

          While the noodles are cooking, prepare the creamy garlic sauce. In a skillet over medium heat, sauté the minced garlic in a bit of oil until fragrant (about 1-2 minutes).

            Add the heavy cream and lemon juice to the skillet, stirring constantly until it thickens slightly. Season with salt and pepper to taste. Remove from heat.

              Strain the ramen noodles and mushrooms, returning them to the pot. Slice the cooked chicken and add it back into the pot. Toss in the baby spinach and let it wilt for a minute.

                Serve the ramen in bowls, pouring the creamy garlic sauce over the top. Garnish with sliced green onions and any optional toppings you desire, like chili flakes or sesame seeds.
