Garlic Butter Chicken and Potatoes Skillet

4 boneless, skinless chicken thighs

1 lb baby potatoes, halved

4 tbsp unsalted butter

4 cloves garlic, minced

1 tsp smoked paprika

1 tsp dried oregano

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

1 lemon, juiced

Prepare the Potatoes: In a large skillet over medium heat, add 2 tablespoons of butter. Once melted, add the halved baby potatoes cut side down. Cook for about 8-10 minutes until they are golden brown and fork-tender. Once cooked, remove them from the skillet and set aside.

    Cook the Chicken: In the same skillet, add the remaining 2 tablespoons of butter. Season the chicken thighs with smoked paprika, oregano, salt, and pepper on both sides. Place the chicken in the skillet and sear for about 5-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F / 75°C). Remove the chicken from the skillet and set aside.

      Prepare the Garlic Butter Sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

        Combine Ingredients: Return the cooked potatoes and chicken to the skillet, pour the lemon juice over the top, and gently toss everything to combine and coat in the garlic butter. Cook for an additional 2-3 minutes to allow flavors to meld.
