Ingredients

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper, to taste

1 tablespoon fresh parsley, chopped (for garnish)

Juice of 1 lemon

Optional: Pinch of red pepper flakes for heat

Instructions

Prep the Chicken: Season the chicken bites with salt, pepper, paprika, and dried thyme in a bowl. Make sure the seasoning is evenly coated.

Melt the Butter: In a large skillet, melt 2 tablespoons of butter over medium heat. Allow it to bubble but not brown.

Cook the Chicken: Add the seasoned chicken bites to the skillet in a single layer. Cook for about 4-5 minutes without stirring, until they develop a golden brown crust. Flip the pieces and cook for an additional 3-4 minutes until cooked through.

Add Garlic: Push the chicken to one side of the skillet and add the remaining 2 tablespoons of butter, followed by the minced garlic. Sauté the garlic for 1-2 minutes until fragrant, being careful not to let it burn.

Combine & Flavor: Mix the chicken with the melted garlic butter, allowing the flavors to meld together. Squeeze the lemon juice over the chicken, adding a citrusy brightness to the dish.

Serve: Remove the chicken from heat and sprinkle with fresh parsley and red pepper flakes if desired. Serve hot as an appetizer or over a bed of rice or pasta.
