1 lb sirloin steak, cut into bite-sized pieces

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

Salt and pepper, to taste

2 tablespoons olive oil

½ cup beef broth

Optional: Fresh parsley, chopped, for garnish

Prep the Potatoes: Begin by boiling a pot of salted water. Add the halved baby potatoes and cook for 10-12 minutes until they are just tender but not falling apart. Drain and set aside.

    Sear the Steak: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the steak pieces with salt and pepper. When the oil is hot, add the steak to the skillet in a single layer. Sear for 2-3 minutes on each side until nicely browned and cooked to your desired level of doneness. Remove the steak from the skillet and set it aside.

      Cook the Potatoes: In the same skillet, reduce the heat to medium and add the boiled potatoes. Cook for about 5-7 minutes until the potatoes start to brown and crisp on one side. Stir occasionally to ensure they cook evenly.
