Garlic Butter Steak Bites and Potatoes

1 lb beef sirloin, cut into 1-inch cubes

1 lb baby potatoes, halved

4 tablespoons unsalted butter

5 cloves garlic, minced

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried thyme)

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried rosemary)

Salt and pepper, to taste

2 tablespoons olive oil

1 tablespoon soy sauce (optional for added flavor)

Fresh parsley, chopped (for garnish)

Prep the Potatoes: In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook for about 10-15 minutes or until fork-tender. Drain and set aside.

    Sear the Steak: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the steak bites generously with salt and pepper. When the oil is hot, add the steak cubes in a single layer (you may need to do this in batches). Sear them for about 2-3 minutes on each side until browned and cooked to your desired doneness. Remove from the skillet and set aside.

      Cook the Potatoes: In the same skillet, add the drained potatoes. Cook for about 5-7 minutes until they begin to brown and crisp up. Stir occasionally to ensure even cooking.

        Make Garlic Butter: Lower the heat to medium. In the same skillet, add the butter and let it melt. Add the minced garlic, thyme, and rosemary, stirring until fragrant (about 1 minute).

          Combine Ingredients: Add the seared steak bites back into the skillet along with the soy sauce (if using) and toss everything together to coat the steak and potatoes in the garlic butter.
