1 lb steak (sirloin or tenderloin), cut into bite-sized cubes

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried)

1 teaspoon fresh thyme leaves (or ½ teaspoon dried)

Salt and black pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Potatoes:

    - Preheat your oven to 400°F (200°C).

      - In a large bowl, combine the halved baby potatoes with olive oil, salt, and pepper. Toss until evenly coated.

        - Spread the potatoes in a single layer on a baking sheet. Bake for 25-30 minutes or until golden and tender, flipping halfway through.

          Cook the Steak Bites:

            - While the potatoes are baking, heat a large skillet over medium-high heat. Add a tablespoon of butter to the skillet and allow it to melt.

              - Season the steak cubes generously with salt and pepper. Add them to the skillet in a single layer (you may need to do this in batches). Sear the steak bites for about 2-3 minutes on each side, until browned and cooked to your desired doneness. Remove the steak bites from the skillet and set them aside.

                Make the Garlic Butter:

                  - In the same skillet, reduce the heat to medium. Add the remaining butter, minced garlic, rosemary, and thyme. Sauté for 1-2 minutes or until the garlic becomes fragrant but not browned.
