Garlic Butter Steak Bites and Potatoes

1.5 lbs sirloin steak, cut into 1-inch cubes

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme, chopped

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Optional: chili flakes for heat

Preheat the Oven: Preheat your oven to 400°F (200°C) for the potatoes.

    Prepare the Potatoes: In a large bowl, toss the halved baby potatoes with olive oil, salt, pepper, and half of the minced garlic. Spread them out in a single layer on a baking sheet.

      Roast the Potatoes: Roast the potatoes in the preheated oven for about 20-25 minutes, or until they are golden and crispy, flipping halfway through.

        Cook the Steak Bites: While the potatoes are roasting, season the steak cubes with salt and pepper. In a large skillet over medium-high heat, melt 2 tablespoons of butter with a splash of olive oil. Once hot, add the steak bites in a single layer (you might need to do this in batches).

          Sear the Steak: Cook the steak bites for 2-3 minutes on each side until nicely browned and cooked to your preferred doneness. Remove the cooked steak from the skillet and set aside.
