Garlic Parmesan Pasta

12 oz spaghetti or fettuccine pasta

4 tablespoons unsalted butter

6 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 cup heavy cream

1 cup freshly grated Parmesan cheese

Salt and pepper to taste

2 tablespoons chopped fresh parsley (for garnish)

Zest of 1 lemon (optional for added brightness)

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti or fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté the Garlic: In a large skillet over medium heat, melt the butter. Add the minced garlic and red pepper flakes, sautéing until the garlic is fragrant and lightly golden, about 1-2 minutes. Be careful not to burn the garlic.

      Make the Sauce: Lower the heat to medium-low, then stir in the heavy cream. Allow it to simmer for 3-4 minutes until slightly thickened, stirring occasionally.

        Add Cheese: Gradually whisk in the grated Parmesan cheese until melted and smooth. If the sauce is too thick, add a little of the reserved pasta water to reach your desired consistency. Season with salt and pepper to taste.

          Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing to combine and coat the pasta with the creamy sauce. If needed, add more pasta water to achieve a silkier texture.

            Garnish: Remove from heat and stir in the lemon zest for an added zing, if using. Serve immediately, garnished with fresh parsley and extra Parmesan cheese, if desired.
