2 lbs baby potatoes, halved

4 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 block (about 6 oz) feta cheese, crumbled

1 lemon, zested and juiced

Fresh parsley, chopped, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Potatoes: In a large mixing bowl, combine the halved baby potatoes, olive oil, dried oregano, garlic powder, salt, and pepper. Toss until the potatoes are well coated.

      Arrange in Baking Dish: Spread the seasoned potatoes evenly on a baking sheet lined with parchment paper.

        Roast the Potatoes: Place the baking sheet in the preheated oven and roast for 25 minutes, or until the potatoes are golden and crispy.

          Add Tomatoes and Feta: After 25 minutes, take the baking sheet out of the oven. Scatter the halved cherry tomatoes and crumbled feta cheese over the potatoes.

            Return to Oven: Squeeze the lemon juice over the mixture and sprinkle with lemon zest. Return the sheet to the oven and roast for an additional 15 minutes, until the tomatoes are blistered and the feta begins to melt.
